Millets Adai

A typical South Indian Adai usually made with multiple dals and white rice. Here I have substituted white rice with millets. This can be accompanied with any chutney/avial/jaggery.

Ingredients

  • Toor dal - 3 tbsp
  • Chana dal - 3 tbsp
  • Moong dal - 4 tbsp
  • Horsegram - 3 tbsp
  • Barnyard millet 1/4 cup
  • Foxtail millet - 1/4 cup
  • Fresh Moringa leaves
  • 4 red chillies
  • 3 garlic cloves
  • oil 
  • salt to taste
Directions

Step 1:

Take all the dals and millets in a vessel. 

Step 2:
Rinse thoroughly for 2-3 times. Add chopped garlic cloves and red chillies. Soak for 3 hrs.
Step 3:
Drain the water and transfer to a mixer jar. Grind into a coarse paste. Add a handful of moringa leaves to it. Mix well.
Step 4:
Heat a cast iron dosa pan. Pour a ladleful of the batter onto hot pan. Spread it thick/thin. Add oil. Cook on medium flame. Flip over and cook the other side. Serve hot!.



Notes:

1. Adjust the quantities of dals and millets according to the needed quantity. 
2. Adjust spiciness acccordingly. 
3. You may add methi leaves instead of moringa leaves. 
4. Unlike normal dosa, adai takes a little longer to cook.
