Ingredients
For curd rice preparation:- 1 cup cooked rice
- 3 to 4 tbsp thick curd
- 1 tsp mustard seeds
- 1/2 inch ginger finely chopped
- few curry leaves
- 1 tsp urad dal
- a pinch of asafetida
- salt to taste
- Oil
For making fritters
- 1/4 cup wheat flour
- salt to taste
- 1/2 tsp red chilli powder
- 1/2 cup bread crumps
- Oil to deep fry
Other ingredients
- Any pickle
- Plain fried papad
- few fried curry leaves
Directions
Step 1:
Heat 1 tsp of oil in a pan. Add mustard seeds. Allow it to splutter. Add urad dal, chopped ginger. Allow the urad dal to golden brown. Add asafetida and curry leaves. Add this to the cooked rice and mix well.
Step 2:Add thick curd to the rice and mix well. Do not add too much curd as it gets soggy and cannot make fritters.
Step 3:Divide into equal portions. Flatten it into the palm. Make a hole in the center and place little pickle over there and close it tightly.
Step 4:Heat the oil in a pan to deep fry. Take wheat flour in a bowl. Add salt and chilli powder. Mix well with water. Make it as a thick slurry.
Step 5:Take bread crumbs in a plate. Dip the rice balls into the wheat flour slurry and then into the bread crumps. Repeat the same with all the balls.
Step 6:
Deep fry them in the hot oil until golden brown. Keep flipping and cook on all the sides in medium flame.
Step 7:Decorate with fried papad and fried curry leaves on top of the fritters. Ready to serve!.
Notes:1. Papad and curry leaves are used for decorative purpose. You may skip them if not needed.
2. We can flatten the fritters and shallow fry too.
