Sweet Potato Curry
Sweet Potato Curry
Sweet potato is a starchy, sweet tasting root vegetable. I have tried this simple yet flavorful curry to go with rice.
Course: Side dish
Cuisine: South Indian
Cooking time: 10 mins
Prep time: 10 mins
Serves: 2
Ingredients
- 1 sweet potato
- 1/2 tsp kalonji seeds. Called as 'karunjeeragam' in Tamil
- 1/2 tsp cumin seeds(jeera)
- 1/4 tsp turmeric powder
- 1.5 tsp red chilli powder
- Salt to taste
- 1 tbsp groundnut oil or any oil of your preference
Directions
1. Peel the skin of sweet potato and cut them into 1 inch cubes. Heat the oil in a pan. Add kalonji seeds, jeera.
2. Add sweet potato and let the oil coat the sweet potato. Stir well for a min. Cover with a lid.3. Cook the sweet potato until soft by stirring it at regular intervals. It takes 5 to 8 mins. While the sweet potato is half cooked, add turmeric powder, chilli powder and salt. Sprinkle some water if the sweet potato sticks to the pan.
4. Once cooked completely, ready to serve!Notes:
1. I have used non seasoned iron pan and the sweet potato was sticking to the pan. You can use pre-seasoned iron pan or a non stick pan to avoid sticking.
