Zucchini Kootu

Ingredients

  • 2 medium size zucchini(seemai suraikkai in Tamil)
  • 3 tbsp or required quantity moong dal
  • few coconut slices
  • 1 tsp cumin seeds
  • 3 red chillies
  • salt to taste
For seasoning:
  • 1 tsp mustard seeds
  • a pinch of asafetida
  • 1 string curry leaves
  • 1 tsp coconut oil

    Directions

    Step 1:

    Wash and chop the zucchini into small cube sizes.

    Step 2:

    Transfer them to a vessel. Add water and salt. Boil it until its cooked soft.

    Step 3:

    While the zucchini is boiling, pressure cook the moong dal until soft. After a whistle, I usually keep the flame low to avoid the dal water overcrowding out of the whistle. Keep in low flame for 5 mins and switch off the flame. Allow the pressure to release naturally.

    Step 4:

    While the step 2 and 3 are in progress, put the coconut slices, cumin seeds and red chillies in the mixer and ground it to a fine paste. Stir the zucchini occasionally.

    Step 5:

    Add the cooked moong dal and the coconut paste to the boiled zucchini. Stir well. Allow it to boil for 2 mins.

    Step 6:

    Add oil to the seasoning pan. Once oil is heated, add mustard seeds. Allow it to splutter. Add asafetida and curry leaves. Add it to the cooked zucchini. Ready to serve!.

    Notes:
    1. I'm using coconut oil for any curry with coconut. You may use any type of oil of your choice.
    2. You may also pressure cook the zucchini along with the dal.
    3. You may use green chillies in place of red chillies as per our choice.
    4. This can be eaten with white rice and ghee or as a side dish with the rice.
