Asparagus Curry in Indian Style

Asparagus is packed with full of goodness including Vitamin A and C. It is low in calories. This recipe is made in Indian style with Indian spices so that it's easy for us to have it.

Ingredients

  • Asparagus - 200 grams
  • onion - 1 medium sized
  • tomato -1
  • ginger paste - 1/2 tsp
  • garlic paste - 1/2 tsp
  • cumin seeds - 1/2 tsp
  • red chili powder - 1.5 tsp
  • crushed fennel powder - 1 tsp
  • coriander powder - 1 tsp
  • chopped coriander leaves
  • salt to taste
  • oil - 2 tsp
Direction

Step 1:

Finely chop asparagus. 

Step 2:

Crush the ginger and garlic. Chop the onions and tomato. Crush the fennel seeds.

Step 3:

Heat oil in a pan. Add cumin seeds.

Step 4:

Add chopped onions. Sauté until translucent. 

Step 5:

Add ginger, garlic paste. Cook until raw smell goes.

Step 6:

Add tomato. Cook until soft. Add asparagus.

Step 7:

Mix well. Sprinkle some water if needed.

Step 8:
Cook until half cooked. Do not overcook. Add red chili powder, coriander powder, fennel powder and salt. Check for salt and spiciness.

Step 9:
Add chopped coriander leaves. Ready to serve!!

Notes:
1. This vegetable is meant to be a crunchy vegetable. Hence do not overcook.
