Cheesy Tortilla Spinach Wrap

Tortillas are staple food in Mexico and Central America. Flour tortillas are made of all-purpose flour. Ages ago, wheat were not grown in America and hence anything with all purpose flour was staple. Corn tortillas are also common in Mexican and American cuisine. I have tried this recipe thinking of a balanced diet including carbs from flour, protein from cheese, iron from spinach and jalapeño for spiciness. This is a perfect to-go wrap for kids without causing any mess while eating.

    Serves : 3

Ingredients

  • 6 tortillas
  • 12 tbsp shredded mozarella cheese
  • jalapeño pepper as needed
  • 1 tomato
  • 2 cups of spinach
  • 1 tbsp butter
MethodStep 1:

Wash and clean the spinach(palak leaves). Saute in a dry pan for 3-4 mins. Add a pinch of salt.

Step 2:

Chop a tomato lengthwise. 

Step 3:
Heat the tortillas in a dry pan for 15-20 secs on each side.
Step 4:
Heat the butter on a pan.
Step 5:
Assemble the ingredients to stuff. Cheese, sautéed spinach, tomato and jalapeño pepper on the tortillas. 
Step 6:
Roll the tortillas gently. 
Step 7:
Place them on the heated butter pan. Slightly toast for 2 mins on both the sides of tortillas. Let the cheese melt. 
Cheesy tortilla spinach wrap is now ready!!!

Notes:
1. You may use the homemade tortillas or regular chapati. 
2. If you like melted cheese(like pizza) on tortillas, use mozzarella. Or if you just need a cheese, you can use the cheese cubes.
