Kaju-Coffee Katli
Kaju katli is a delicious dessert which anyone can't say no to it. Unlike other sweets, the taste of kaju katli is dominated by cashews with mild sweet added in it. This particular recipe has a twist like half of the layer has cashews-sugar and another half has cashews-coffee flavor.

Ingredients
For Cashews-sugar paste:- Cashews 1/2 cup
- 1/4 cup white sugar
- 1/2 tsp ghee
- 1/8 cup water
- 1/4 cup palm jaggery
- 1 tsp instant coffee powder
- 1 tsp ghee
- 1/4 cup water
For Cashews-coffee paste:
- Cashews 1/2 cup
- 1/4 cup palm jaggery
- 1/2 tsp ghee
- 1/8 cup water
- 1 tsp instant coffee powder
DirectionsStep 1:
Take 1/2 cup cashews. Pulse 3-4 times in a mixer. Do not grind. Grinding makes cashews release oil from it.
Step 2:
Add 1/8 cup water to sugar in a pan. Boil in low-medium flame until one string consistency.
Step 3:
Add cashew powder. Cook in medium flame until the paste starts leaving the pan.
Step 4:Grease a parchment paper with ghee and pour the paste. Flatten it with ladle.
Step 5:Take instant coffee powder and mix with little water.
Take 1/2 cup tightly packed powdered cashews and 1/4 cup palm jaggery. Melt palm jaggery with water to remove impurities.
Step 7:Strain in a pan. Boil for a min. Add cashews powder. Mix well. Add coffee paste. Mix well until it starts leaving the pan.
Step 8:Pour on a greased parchment paper. Add the cashews-coffee paste on top of cashews-sugar paste and spread them evenly.
Step 9:Place a greased parchment paper on top and roll it evenly with rolling pin. Let it cool down for 10 mins.
Step 10:Grease a knife with ghee. Cut into diamond shaped.
Kaju-Coffee Katli is now ready!!!Notes:
1. Pulse the cashews and make it a fine powder.
2. If you feel the cashews are not crisp, dry roast them in low flame without changing the color.
3. One string consistency of the sugar syrup is not always needed. You may even boil for a min, add the cashews powder and cook until everything combines.
