Kale Poriyal

Simple recipe done in South Indian cooking style to make it easier for us to include in our diet. This greens has got a lot of nutritious value and best accompanied with rasam/sambar/kuzhambu.

    Serves: 3

Ingredients

  • a bunch of kale
  • 2 garlic cloves
  • 1/2 chopped onions
  • 2 red chilies
  • 1/2 tsp cumin seeds
  • 1/4 tsp sugar
  • oil
  • salt to taste
DirectionsStep 1:
Cut off the stems from kale. 
Step 2:
Put them in a colander and wash thoroughly.
Step 3:
Chop into fine pieces

Step 4:
Cook the chopped kale with required salt. Sprinkle some water. Saute often. Add sugar to retain the color of the greens. Sprinkle more water if needed.
Step 5:
Meanwhile chop onions and garlic and keep cumin seeds, red chilies and grated coconut ready.
Step 6:
Heat oil in a pan. Add cumin seeds, red chilies and garlic. Saute for a min. Add onions and saute for a min.
Step 7:
Add the cooked kale and grated coconut. Mix well.
Kale poriyal is now ready to serve!!

Notes:

1. Cooking time of Kale depends on the tenderness of the greens. It took me 20 mins to cook.

2. Kale gets dry while cooking. Hence, sprinkle some water to it.

3. If you prefer the stems to be on, cook the stems first and then add the leaves once the stems are half cooked.
