Soft Tacos with Indian Vegetables

Tacos are traditional Mexican dish usually made with wheat tortilla topped with some filling. This recipe is made with Indian vegetables yellow pumpkin and small colacassia (seppankizhangu). Let's see how the preparation goes.

Ingredients

For the dough:
  • Small colacassia - 4
  • wheat flour - 1 cup
  • salt to taste
For filling:
  • yellow pumpkin
  • garlic cloves - 2
  • 1/2 onions
  • capsicum (any color)
  • black pepper - 2 tsp
  • salt to taste
  • coriander leaves
Other ingredients:
  • ghee
Method

Step 1:

Boil and mash the yellow pumpkin and small colacassia. 

Step 2:
Add wheat flour to mashed colacassia and knead the dough by adding salt. Add water if needed. I did not add water while kneading. 
Step 3:
Chop the garlic cloves, onions and capsicum. 
Step 4:
Heat oil in a pan. Add chopped garlic, onions and capsicum. Stir for a min. 
Step 5:
Add mashed yellow pumpkin, salt to taste and black pepper. Filling is now ready!.
Step 6:
Roll the dough as chapati. Heat a pan and cook on both the sides. Apply ghee.
Step 7:
Place the yellow pumpkin filling in the middle.
Step 8:
Fold the taco. Place some puffed rice.

Notes:
1. I did not need to add water while kneading the dough. You may add if needed.
2. Do not add more colaccassia to the dough as you may end up adding more wheat flour.
