Hyderabadi Vegetable Dum Biryani
Dum biryani is the most flavorful Hyderabadi cuisine. This recipe is loaded with vegetables and all spices. We can prepare this biryani with non vegetarian as well. More than the cooking time, it requires a lot of prep work but really worth the work while tasting it😊. Let's check out the recipe details.

IngredientsFor Vegetables masala:
- 1/2 cup green beans
- 1/2 cup carrot
- 1/2 cup green peas
- 1/2 cup sweet corn
- 1 medium sized onion
- 1 tomato
- 1.5 tbsp. ginger-garlic paste
- 3 green chilies crushed
- 1/4 cup curd
- 1 tsp garam masala
- 1 tsp coriander powder
- 1/4 tsp turmeric powder
- 1/2 tsp red chili powder
- salt to taste
- 2 tbsp. ghee
For boiling rice:
- 1.5 cups basmati rice
- 3/4 tsp Shahi jeera
- 1/4 tsp black peppercorns
- 1/2 inch cinnamon
- 2 or 3 bay leaves
- required water to boil the rice
- 1 tsp oil
- salt to taste
To assemble the biryani:
- 1/4 cup mint leaves chopped
- 1/4 cup coriander leaves chopped
- 1 tsp garam masala
- 1 tsp ghee
- 1 tsp rose essence
MethodStep 1:
Wash and soak the rice for 15-20 mins.
Boil the water in a pot. Add Shahi jeera, black peppercorns, cinnamon, bay leaves, salt and oil. Mix well.
Step 3:Water starts to boil. Add the soaked rice. Mix well. Check for salt. Salt should be little more in the water so that salt content would be perfect after draining the water from rice.
Step 4:Chop the vegetables and keep them aside.
Step 5:The rice should be 70% cooked. It breaks only when pressed hard.
Step 6:Heat ghee in a pan. Add onions. Sauté for a min. Add ginger-garlic paste and green chili paste. Saute until raw smell goes.
Step 7:Add vegetables and cook for 5 mins.
Step 8:Add tomato and salt.
Step 9:Add turmeric powder, coriander powder, garam masala and red chili powder. Close the lid. Vegetables should be half cooked as they are going to get cooked in dum as well.
Step 10:Add curd. Mix well.
Step 11:Take out half of the vegetables masala paste in a bowl.
Step 12:Spread out the cooked rice on top of the vegetables layer. Spread some chopped mint, coriander leaves and garam masala.
Step 13:Again spread out the vegetables masala.
Step 14:Spread out cooked rice, mint leaves, coriander leaves, garam masala.
Step 15:Sprinkle rose essence and ghee.
Step 16:Close the pan with aluminum foil.
Step 17: Seal the pan with a lid. Heat a dosa pan and place the biryani vessel on top of the pan. Keep the flame low for 20-25 mins.
Step 18:Open the lid. Give it a gentle mix. Smells amazing!!.

1. Basmati rice is best suited for Hyderabadi dum biryani. Do not use any other rice.
2. You may also close the lid with chapati dough sticking around the biryani vessel and close with a lid.
